This whole grain penne pasta comes from the Sicilian cooperative Libera Terra. The pasta is made in al bronzo, which means that it is pressed through a bronze mould. This gives it a rough surface and a dense structure. This type of pasta lends itself perfectly to al dente cooking and sauces adhere to it better.
