Baby bananas

Ecuador

Our baby bananas come from the Caluma region in Ecuador, where ten family farmers cultivate the fruit at the foot of the Andes, at 700 metres above sea level. They grow the bananas in agroforestry systems with other banana varieties, citrus fruits, coffee and cassava. The families grow naturally and without pesticides, although they are not yet certified organic.

Baby bananas grow to only about 10 centimetres in length and taste sweeter than their larger relatives. Like our other bananas, they travel directly from the ripening plant to your home without any intermediate storage. The fruit arrives green, allowing you to ripen it to your own taste.

We source our baby bananas from our partner Latbio, a farmer-founded company dedicated to ecological and regenerative agriculture. Latbio supports family farmers by providing expertise, offering training in sustainable farming methods, and managing the distribution of their products.

Use & preparation

  • Use green bananas in savoury dishes: Peanut and Banana Curry, Green Banana and Black Bean Stew.
  • Use ripe bananas to make delicious smoothies and if you still have some left over, you can freeze them or bake a classic banana bread.

Storage & shelf life

Bananas stay fresh for several weeks when stored in a cool place. The optimal storage
temperature is 13°Celsius, like a cool cellar. The temperature in the refrigerator is too low for bananas and the cold may damage them. Bananas also require a certain amount of humidity. If they become too dry, they will not turn yellow and be very difficult to peel. You shouldn›t remove the plastic bag that comes with the box, as it prevents the fruit from drying out. Make sure that there is enough air circulation. Never store your bananas in an airtight container, otherwise excess moisture can accumulate, which may lead to the fruit moulding and spoiling. Open the box
regularly and make sure that there isn›t any moisture collecting in the bag.

Store the bananas you plan on eating soon loosely packed in a smaller plastic bag at room temperature. Sprinkle a little water on them to keep them from drying out and open the bag regularly to prevent moisture from accumulating. The fruit will ripen within a few days. The warmer the room temperature, the faster the bananas will ripen.
