This aromatic rice comes from the Dataganj region in the state of Uttar Pardesh in Northeast India. Here, more than 800 family farmers grow the rice on around 1.5-2.0 hectares of land, where all processing is done by hand. The families irrigate their fields strategically without having to rely on constant flooding.
Use & preparation
Preparation (basic recipe for 3-4 people):
Wash 1 cup of rice twice and put it in a saucepan. Add 1.5 times the amount of water and add some salt. Soak for 10 minutes, then bring to the boil. Immediately bring the heat down to medium, then let the rice simmer for about 10-12 minutes with the lid on.
