Partially broken macadamia nuts, roasted and salted after the harvest. The shell of the macadamia nut is very hard and relatively thick. When the shell is cracked, some nuts will break. In wholesale trade, broken nuts are worth less than whole ones, even though their taste is not affected in any way.
Storage & shelf life
Due to their high fat content, macadamia nuts have a limited shelf life at room temperature. Once opened, store the nuts in a tightly closed container in the fridge or consume them quickly. Make sure that the container is as airtight as possible to prevent moisture from reaching the nuts. You can also freeze nuts and seeds to extend their shelf life by a few months.

I make a living from growing macadamias, but I also love raising chickens.
"I rely entirely on organic methods to grow my nuts," says Gikono Herbert Njue. "But I also follow the Demeter guidelines." The farmer believes that organic farming is both cost-effective and results in a product with excellent flavour. "My biggest challenges are theft – people stealing my ripe nuts – and damage caused by insects," he explains. When asked what he would like to see change in farming, he answers: "I’d like to see better prices for agricultural products." Even so, he is content with the price he currently receives for his nuts.
