Suedhang Mr. Toi

The beans for this 100 % canephora coffee are grown on Toi Nguyen's Future Coffee Farm near Bao Loc in Vietnam. We source them from Suedhang, a German coffee roaster based in Tübingen. Suedhang has developed a roast that transforms this canephora coffee into something truly special. Mr. Toi has a sweet, aromatic flavour with notes of maple syrup, strawberry jam and vanilla. But be careful: a canephora coffee contains around twice as much caffeine as an arabica.
Use & preparation
When preparing canephora with a coffee filter, Suedhang recommends a coarser grind and lower water temperatures than you would use for an arabica - 89-92°C is ideal. This way, fewer potentially dry or bitter aromas will be extracted while brewing.
If you prefer to prepare your canephora using an espresso machine with a portafilter, Suedhang recommends a high coffee-to-water ratio. For a single shot, the ratio would be 20 g of coffee in the portafilter for 38 g of espresso in the cup. Pre-infuse the puck for 3 seconds before extracting the coffee at a pressure of 7.5 bars and a temperature of 94°C for 19 to 22 seconds.
